Origin

Located in the central foothills of the Andes Mountains in the Risaralda Department, Finca Milan's soil is enriched with nutrients from the eruptions of nearby volcanoes. The coffee cherries develop complex and unique flavors due to the wide thermal range of the microclimate fluctuating between warm days and cool nights. Julio Cesar Madrid is a third-generation coffee grower who leads the Finca Milan farm that has been in his family for over 40 years. They specialize in Caturra, Castillo, Pink Bourbon, and Catiope varieties.

The coffee begins as world-class Caturra prior to the unique adaptation of anaerobic processing which was created by Andrews Quinceno himself. The embryonic stress produces unique and exciting flavors by putting the coffee seeds through different metabolic stages to convert carbohydrates into different flavor compounds. The beans are placed in a bioreactor and inoculated with starter cultures and fresh watermelon fruit mossto. After injecting nitrogen to facilitate the metabolic process. After ending the fermentation stage, oxidation is initiated and the coffee beans are transferred to solar then mechanical dryers. This complex process develops the natural flavors and imparts the fresh watermelon flavor that we fell in love with.
