Origin
The family run farm of Villa Pastora, located in Palestina, Huila, has been focused on growing excellent Colombian coffee since the 1980's. Ownership has passed from Mrs. Pastora Anacona to her grandson, Gerson Mora Oretega, who now manages the farm with his father, Alvaro Mora. All three generations pride themselves on producing the highest-quality coffee to differentiate their beans. Their passion for quality is matched by their focus on sustainable growing methods.
For this lot of pink bourbon, the coffee is fermented in tanks of water for 96 hours before being moved to a mechanical dryer for 48 hours. The final resting for 14 days in a drying shed finished their careful natural processing. In addition to their own production, they share their fermentation advice and drying infrastructure with community coffee growers. Supporting these growers helps uplift the wider local economy and results in fair wages for their farmers.
Pink Bourbon is a special bean that traces its genetics back to Ethiopia, the home of thousands of coffee varietals. It has gained popularity in recent years among coffee aficionados for the tropical notes, tart apple acidity, and floral flavors. We help this balance shine with a delicate roast that retains the characteristics and has an inviting aroma from roasted bean to your brewed cup.
