Origin
This coffee comes from Fabian Acevedo, a fourth generation coffee producer, growing on their family farm in Providencia de Geshua in the Huila region of Colombia. The combination of their expertise, high elevation, and precise processing methods brings out the best in this washed Caturra varietal. We kept the roast light to preserve the clean, bright acidity balanced with a citrus sweetness. The lighter tea like body has a sophisticated finish we love that will leave you wanting more. We're always excited to feature these unique microlots for our HiFi series.
The ripe coffee is washed and dried on raised beds. The coffee is oxidized for 24 hours after picking and fermented for 36 hours following depulping. The coffee is dried for around 15 days with good ventilation prior to packing for importation by our partners Primavera Green Coffee. We're proud to support producers who are dedicated to their craft, care about sustainably growing healthy plants, and are willing to adapt and add new processing techniques resulting in the highest quality coffee in your cup.
